Homemade Chewy Chocolate Chip Granola Bars



Nothing better than making it yourself. It tastes better and you can control what is going into it. My daughter has allergies so we never buy granola bars. On ever package of store bought granola bars is warns that there might be cross contaminates that my daughter is allergic to. So sad that I couldn't buy my favorite granola bar anymore, I found a recipe online that was just as good. My daughter and husband will eat the whole 8x11 pan of these if I leave them out. They are so delicious!

Ingredient:
4 cups Bob's Red Mill Quick Oats
1/3 cup of Coconut Oil 
2/3 cup Agave Nectar
4 Tablespoon of Honey cut in half
2 teaspoons of pure vanilla extract
1/2 cup Unsweetened Coconut Flakes
1/2 cup chocolate chips


Preheat Oven 350

Start by toasting Quick Oats on a dry cookie sheet in the oven for 15 min. Take the oats out of the oven every 5 min and toss them with a spoon. When they are done let them cool. This will make sure you don't burn them in spots. Combine Oil, Agave, Half of honey, Vanilla, and Coconut in to a large bowl. Mix well with a spoon. Add in cooled Oats, and chocolate chips. Mix well. Spray a 8x11 pan with cooking oil. Transfer the granola mixture in to the pan. Press down all over the pan. Drizzle the rest of the honey over the top and cook for 20-30min, until golden brown on top. Let cool completely or they will fall apart. They will get harder once they cool. ENJOY!
